Greetings from the Emerald Isle! I'm thrilled to share a chapter of my culinary journey that has significantly shaped my path as a chef. This tale takes us to the charming city of Cork in Ireland, where a gem named Paradiso, led by the illustrious chef Denis Cotter, became a pivotal inspiration in my life.

Paradiso first opened its doors in October 1993, blossoming into an internationally acclaimed haven for innovative and groundbreaking vegetable cuisine. Denis Cotter, the founder and executive chef, has been a guiding light in the world of vegetarian cooking. My first encounter with Paradiso was through Denis' mesmerizing book, "Wild Garlic, Gooseberries & Me." The pages of this culinary masterpiece captivated me so much that I reached out to Denis, hoping to volunteer in his kitchen. To my delight, he agreed, and this opportunity marked the beginning of a transformative journey.

Joining the Paradiso team in 2008 was a leap into the unknown. I moved into a house with strangers and ventured into a city where I knew no one. The initial months were a whirlwind of challenges. Adapting to the high-paced environment, honing my skills, and coping with long hours and little recognition was daunting. It was a period marked by hard work, occasional bouts of depression, and an intense learning curve.

However, one of the most significant aspects of my time in Cork was discovering Gort­nanain Farm, a nearby vegetable farm that supplied Paradiso. Run by the warm-hearted Lucy and Ultan, this farm wasn't just a supplier; it was a sanctuary. On my days off, I would cycle to Gort Nanain, volunteering my time and immersing myself in the intricacies of farm life. This experience wasn't just about learning to grow vegetables; it was about finding emotional support and envisioning a future where I could replicate a similar symbiosis between farm and kitchen.

My tenure at Paradiso was more than just a job; it was a period of immense personal and professional growth. Working alongside the talented team at Paradiso and being influenced by their dedication and creativity has profoundly shaped my vision for The Warren and Cegin Hedyn.

As I reflect on this journey, I am filled with gratitude for the experiences, the people, and the lessons that have paved the way to where I am today. Paradiso was not just a restaurant; it was a beacon of inspiration, a place where I forged my identity as a chef and a visionary.
