Beef is the most carbon heavy ingredient we use at the restaurant so it's really important that we source it in the most sustainable way we can. Paul who runs Hazelwell Organic Farm took us out on a tour of the farm to show us how he rears his animals & regenerates the local environment as he does it.

We are almost unique in West Wales in that all the meat we sell has been reared on our own farm. The farm has 3 staff and employs a part time butcher and has been selling meat direct since 2006. We grow all our own cereals and forage. We also carry out a wide range of conservation work. Hazelwell Organic Farm produces top quality beef and lamb from healthy and contented animals managed in a sympathetic stress-free environment. It is produced to the highest standards of organic farming laid down by the Soil Association. This includes the avoidance of synthetic fertilisers, pesticides, herbicides, growth regulators, livestock feed additives and GM material. Animal welfare issues such as nutrition, housing, health breeding and rearing are also a high priority. Hazelwell animals are fed only on grass and cereals produced on the farm and the meat is hung for long enough to enhance its quality and flavour. The beef is produced by native breed bulls using traditional breeds selected for their tenderness and great eating quality.
